Ideal recipe when we have herbs in the garden or when we bought a little too much to avoid wasting the. Additionally, it can be done in advance and freezed.

Here are three easy and fast recipes.

CLASSIC PESTO 

Time: 5 to 10 minutes | Yield: 500 ml

  •  3 cups basil 
  • 1/3 cup extra virgin olive oil 
  • ¼ cup pine nuts
  • ½ cup grated Parmesan
  • 2 garlic cloves
  • Juice of 1 lemon
  • Pinch of salt

Put everything in the mixer until you obtain a creamy texture.

Savour with pasta or fish.

SPINACH & PISTACHIO PESTO

Time: 5 to 10 minutes | Yield: 500 ml

  •  3 cups spinach
  • 1/3 cup extra virgin olive oil
  • 1/3 cup pistachio
  • ½ cup grated gruyere
  • 2 garlic cloves
  • Juice of 1 lemon
  • Pinch of salt

Put everything in the mixer until you obtain a creamy texture.

Savour with steak, BBQ, sausages.

ARUGULA & MINT PESTO 

Time: 5 to 10 minutes | Yield: 500 ml

  •  3 cups arugula
  • ½ cup mint 
  • 1/3 cup extra virgin olive oil
  • 1/3 cup walnuts
  • 1/3 cup hemp seeds
  • ½ cup grated Parmesan
  • 2 garlic cloves
  • Juice of 1 lemon
  • Pinch of salt

Put everything in the mixer until you obtain a creamy texture.

Savour with grilled chicken, veggies and as a dip.
