A delicious salad full of colours, fresh and nourishing. It can accompany a breaded escalope.

Mandarin, pomegranate & green salad

Time: 20 minutes | Yield: 4 people

Ingredients

  • 2 avocados diced
  • 2 cucumbers cut in slices
  • 2 mandarins, slices cut in half
  • 1 pomegranate
  • 1 ½ cups cut romaine lettuce
  • 1 cup cut kale
  • 1 cup baby spinach
  • ½ cup pecan nuts slightly crushed
  • 1 cup goat cheese in crumbles
  • 1 lemon
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • 2 tbsp white wine vinegar
  • 100 ml extra virgin olive oil
  • Pink Himalayan salt 
  • Black pepper

Preparation

Wash veggies, cut as required. Mix all ingredients together and finish by topping with pecan and goat cheese. Put all vinaigrette ingredients in a small bowl and whisk together. Mix with salad and serve.
